4 ripe tomatoes
6 eggs
¼ cup olive oil
½ cup feta crumbs
Salt
Pepper
Peel the tomatoes, carve the tomato a little and remove the skin.
Cut the tomatoes into small pieces.
In a fry pan, over medium heat, without fat, leave the tomatoes for about 10΄ to cook.
Add the olive oil and mix.
In a bowl, mix the eggs with salt and pepper.
Add the feta and mix.
Pour over the eggs mixture over the tomatoes.
Mix the mixture and boil over medium heat for a few minutes.
Serve with toasted bread and sprinkle with a little mint.
